Ceviche de Mango (Mango Ceviche)
💥 Peeled, pitted, and diced into 3/4-inch (2 cm) pieces, two large, ripe mangoes.
💥 4 limes juice
💥 14 teaspoon of salt
💥 1 limo chile, seeded and cut finely
💥 2 cilantro sprigs' finely chopped leaves
Directions
01) While you are preparing the other ingredients, soak the red onion in chilled water for 10 minutes.
02) Add half the lime juice, salt, and diced mangoes to a bowl. If required, add extra of either or both; you don't want it to taste very sour. Taste for balance. After adding the onion and cilantro leaves, rinse the chile and add it next.
03) Gently stir everything together, then marinate and chill for 5 minutes in the refrigerator.
04) Place each serving in a big bowl or glass.
