Ingredients

* six giant ( 06 ) tomatoes
* 1 substantial red pepper
* 4 garlic cloves
* milk, 3/4 cup skim (or milk of choice)
* freshly cracked black pepper, one teaspoon
* fresh basil leaves, 1/4 cup

Preparation

1. 400°F oven temperature. Use parchment paper to cover a baking sheet.

2. Remove the seeds and stem from the bell pepper after cutting it in half.

3. On the baking sheet, add the tomatoes, red pepper, and garlic. Roast for 10 minutes.

4. Flip the pepper and tomatoes, then remove the garlic. Continue baking for an additional 20 minutes.

5. Vegetables should be taken out of the oven to cool. Peel the tomatoes' and peppers' skins when they have cooled.

6. Blend all ingredients in a powerful blender until they are completely smooth. In a saucepan over low heat, cook the soup to the appropriate temperature and serve right away.


Changes and Replacements

If you don't have fresh basil, you can use 1/2 tablespoon dried basil. Use your preferred plant milk to make your soup dairy-free, such as reduced-fat coconut milk or cashew milk, but make sure you get an unflavored, unsweetened variety.

* For a well-rounded lunch, serve with a piece of crusty bread, a half-sandwich, or a salad.
